Ingredients:1 chicken breast
1/4 cup jerk marinade
1 tablespoon oil
1 lemon (juice and zest)
1 tablespoon oil
1 teaspoon honey
2 teaspoons Dijon mustard
salt and pepper to taste
2 handfuls romaine lettuce (chopped)
1 mango (peeled, pitted, and cut into bite sized pieces)
1 avocado (peeled, pitted, and cut into bite sized pieces)
1 handful kidney beans (rinsed and drained)
Direction:
1. Marinate the chicken in the jerk marinade for 20 minutes to overnight.
2. Heat the oil in a pan.
3. Add the chicken and saute until golden brown on both sides, about 3-5 minutes per side.
4. Mix the lemon juice, lemon zest, oil, honey, Dijon mustard, salt and pepper.
5. Assemble salad and pour on dressing.
5. Top with sliced jerked chicken.
